Chocolate Microwave Mugcake

            This is what you make when you get to the end of a meal and aren’t quite satisfied yet. It’s perfect because it’s quick, easy, customizable, and single serving. All you need is a mug, a microwave, a few basic ingredients, and some creativity. This is a fairly basic version, but the flavoring possibilities are endless, not to mention the topping options. I’ve made breakfast mugcakes before, but this is a sweeter version attempting to be more like a chocolate lava cake. But unlike the chocolate lava cake, it has no gluten, added sugar, dairy, or oil! I put a piece of dark chocolate on top of my cake, but next time I will plan on placing it in the batter to really get the chocolate lava flowing. Surrounded by some frozen strawberries, it was the perfect way to finish off the night!

Chocolate Mugcake

1 egg

1 tbs unsweetened cocoa powder

2 tbs almond flour (could also use oat or coconut)

2 tbs unsweetened almond milk

½ tsp baking soda

½ tsp vanilla extract

optional sweetener such as honey, maple syrup, or stevia

Toppings: one square of dark chocolate and some frozen strawberries

Directions: Place all ingredients (except for the toppings) in a microwave-safe mug and combine. Microwave for 1-2 minutes, top with chocolate and strawberries and enjoy! That’s it!

Add spices, protein powder, almond butter, applesauce, banana, mint extract, coconut and anything else you can think of for infinite possibilities
