Making Banana Pancakes…

…for dinner. You can never go wrong with breakfast for dinner. Eggs, pancakes, waffles, bacon, even yogurt and smoothies, I could eat all day. Usually I am in too much of a rush in the morning to really make a satisfying breakfast, or I am just not hungry enough to eat that much. But yesterday, after a Christmas luncheon where I basically ate dinner for lunch, I felt a little backwards anyways. As I started to get hungry at around 5pm, it was the perfect opportunity for pancakes!

I follow a lot of food Instagram accounts that post delicious breakfasts like mugcakes, banana ice cream, and pancakes. I tried the mugcake last week, so today was the time for pancakes. I hadn’t really made them since summer 2013, when I created a few delicious plates. It was right after returning from the rowing World Championships and I was celebrating no longer having to weigh 125 pounds. First Oreo cookie pancakes, then blueberry, then banana almond butter. Some of my first fantastic food creations! All healthy too.

Here’s a healthy, easy, quick pancake recipe. They were so good that my sister stole some of mine and then proceeded to make her own.

Banana Pancakes

1 banana, mashed

2 eggs

and that’s really all you need!

Here’s what else I added:

Cinnamon

2 tbs oats/coconut flour

Cacao nibs/chocolate chips

Chia seeds

More options:

Protein powder, spices (gingerbread flavored), cocoa powder, fruit

Mix all ingredients in a bowl and fry in coconut oil. Decorate with Greek yogurt, fruit, almond butter, and extra spices and serve!
