Snowball Cookies

It’s a powder day! This week’s dorm baking cookies don’t taste like peppermint or gingerbread, but they certainly look like the holidays. Soft and powdery, and they melt in your mouth just like snow. These cookies come together very quickly with few ingredients. The best part about these cookies is not so much the flavor but the texture. They are soft and melty from both the butter and powdered sugar. Create your own snowday with these festive cookies!

Snowball Cookies recipe found here. makes about 30 cookies

1 cup butter, softened

2/3 cup powdered sugar

¼ tsp salt

2 tsp vanilla extract

3 tbs cornstarch

2 cups flour

2 cups powdered sugar, for rolling.

Preheat oven to 350F. Mix butter on medium speed until creamy, then add sugar, salt and vanilla. Sprinkle cornstarch evenly over mixture. Mix in flour on low speed until combined. Roll into balls and place on a baking sheet with parchment paper. Cook for 18-20 minutes until golden brown. Let cool for a few minutes. Pour 2 cups powdered sugar in a bowl, and roll each of the cookies in it and place on a wire rack to fully cool. Roll cookies again after cooled. It helps if you try and pack the sugar on and completely cover them. Roll for a third time if necessary.
